Sandy requested a recipe for my peppernuts and here it is. I think the recipe has been in the family for generations, and according to mum it is my great-grandmother`s.
125 grams (dark) syrup
125 grams sugar
3 table spoons of cream
30 grams butter
¼ teaspoon aniseseed (which gives a liquorice-like flavour)
¼ teaspoon pepper
Mix all of this in a pan and melt it while mix everything together. It shall not boil, but there is no disaster done if so happens. Add:
250 grams flour mixed with
¼ teaspoon baking powder.
Mix everything together. The dough should end up smooth and slick. If it is crumbly try add a mixture of more cream/butter.
Because the batter stiffens up and is hard to work if it stays in the pan, I usually pour it out on a dinner plate or some such and spread it a little. It is best to work with when slightly warm still. Make little balls, not bigger than a mouthful. Depending on the size you make them one batch should give about 60 nuts.
Bake in oven for 10-12 minutes on 180 C.
Caution. The nuts can be very hard, but soften them up in your mouth before chewing on them.
