I think the idea for this community is really cool so here I am and I've brought my mom's potato salad.


5 lbs. of potatoes (your favorite kind)
8 hard boiled eggs
1 & 1/2 cup chopped celery
2 -3 medium carrots
1 & 1/2 cups mayonnaise (your favorite brand)
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika

Chop celery.

Cut potatoes into pieces about 2" by 2" (Noah size,hee hee). No need to peel potatoes.Can be peeled after cooling or leave on for a more rustic flavor.Place in pot cover with water and bring to boil.Let slow boil until potatoes are just cooked.Fork can be poked in but not easily.Drain and place in single layer on baking sheet or other pan to cool.When cooled, cut into bite size pieces about 1" size.

Cook eggs til hard boiled.Cool.Remove shells and chop.Set aside.

In medium bowl,mix mayonnaise,salt,pepper and paprika.Refridgerate until potatoes are cooled and eggs chopped.

When all ingredients cooled, place potatoes into large bowl or other container,add eggs.Peel carrots and peel some carrot curls into the bowl about 1/cup.Add the mayonnaise mixture.Stir until blended.Sprinkle with some paprika if desired. Cover and refridgerate until time to serve. Enjoy!!

I loves me some potatoe salad. I mean, I really love it. And I am always amazed at how many different ways there are to make it.

Last year, my best friend Larson stayed over for a few months and we taught each other our favourite recipes. We spent a lot of time fighting over the kitchen, and how to "properly" cook things, so we finally just agreed to teach each other the different ways that we do stuff.

One of the recipes she showed me was her mother's potato salad, which was so incredibaly different than my mother's it blew my mind. Since then, I have been collectiing potato salad recipes, because it is just astounding how many different ways there are to make it. And everyone claims their's is the best. And it always is, of course.^.^

As expected, your mum's is quite different than everyone else's mums'. ^.^ But it still sounds delicious, and thank you for sharing.
I will now have to try this version as well.
