Vegetarian peppers with mashed potatoes and cheese
2 big (red) peppers
4-6 spring onions (but other onions will do too)
2 tablespoons olive oil
150 grams feta, in dice
15 grams of freshly cut Italian herbs (you can also use dried ones, but you have to use less, because they have a stronger taste)
400 grams peeled potatoes
200 grams grated cheese
olive oil.
Preheat the oven to 200 degrees centigrade. Cut peppers lengthwise. Remove the seeds but leave the stem. Blanch them for 4 minutes. Drain in a strainer.
Heat tablespoon olive oil in pan and lightly fry onions.
Make mashed potatoes (with a little milk and butter), mix 125 gram grated cheese through the potatoes. Add (spring) onions, herbs and feta.
Fill peppers with the mashed potatoes, top with grated cheese and a few drops of olive oil.
Put peppers in oven for about 20 minutes.
You can eat it with brown French bread. It will serve about 4 people, but it depends on how much they eat.
