Mushrooms!
I have some huge mushrooms that I think will do well for stuffing or filling. I don`t know what to fill or stuff them with, so ideas would be greatefully accepted.

Brown 1/2 pound ground pork sausage and drain off grease. Mix with 8 ounces softened cream cheese. Stuff into mushroom caps. Broil 2-3 minutes, until lightly brown.

First, try for large mushrooms because they shrink like mad.
Clean and pull the stems off. Then I saute the caps, cap side down for a couple of minutes until they start to weep. This brings out the flavor. Save any liquid and add in later.
Then Saute about 1/2 cup chopped onions together with the stems that are also chopped. Add a clove of garlic (through the press). Then bread crumbs (not packaged...get bread slices and dry slightly in 250 degree oven, then grate into the mushroom-onion mix. Little pieces of bread are OK too. Then moisten with white wine. Season with salt, pepper (dill works also) Stuff into the mushrooms and bake at 350 for about 15 mins.
