Appetizer #3

Brandied Salmon Paté (how do you make the accent acute in html???)
it goes on the "e"..but then you know that!!!

This is good because you can make it 1 or even 2 days prior.



3/4 -1 lb piece salmon fillet....you could use the salmon steak I guess
2-3 slices bacon, fried crisp.
2 small 3-oz packages cream cheese....have at room temp so it's soft....unless you live in a cold climate with no heat

1 cup chopped green onions...use both white and green parts
(sometimes these are called scallions, or even rareripes)
3 Tbsp brandy

Boil salmon in water for about 20 mins until cooked. Cool and flake.

Add salmon to the cream cheese ...it works easier that way. Blend in the green onions and crumbled bacon. Add brandy 1 Tbsp. at a time until you get a spreadable mixture. Refrigerate until about an hour before you need it and then serve with crackers.
