This recipe is for [livejournal.com profile] melilot_hill and anyone else who wants a super easy brownie recipe. I haven't bought a boxed mix since I found this one.

BROWNIES

1/3 cup cocoa
3/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
1 cup sugar
1/2 cup butter (melted)
2 eggs
1 tsp. vanilla
1 cup chopped nuts (optional)

Mix dry ingredients. Add wet ingredients. Mix well. Pour into greased 8x8x2 pan. Bake at 350 degrees for 25 to 30 minutes.

I made this for dinner last night. It's called baked tacos because the filling is taco meat, but it's really more like a smothered burrito. Yummy!

CREAMY BAKED TACOS

1 lb. ground beef
1 pkg. taco seasoning
3/4 cup water
6-8 6" flour tortillas
1 can cream of mushroom soup
1/3 cup milk
3/4 cup shredded cheese

In a large skillet, prepare ground beef with taco seasoning and water as directed on seasoning package. Evenly spoon mixture into each tortilla. Roll tortillas and place seam side down in a 11x7x2 baking dish coated with non-stick cooking spray. Spoon any remaining taco meat over rolled tacos. Combine mushroom soup and milk. Pour evenly over top of tortillas. Sprinkle with cheese. Bake at 325 degrees for 30 to 35 minutes. Serve topped with lettuce, tomato, sour cream and salsa if desired.
