I don't think it tastes very eggy ... that is, it doesn't taste like an omelet or a frittata since it's mixed with the buttermilk. What with everything mixing together, it becomes quite batter-like. I'd say the ingredients whose flavors predominate are the cheese and the corn of the tortillas, the chilies and whatever other ingredients you choose to put in. It's a bit souffle-like in that it rises up nicely, but I don't think you taste a lot of egg. Heh, never really thought of that, though :-)
