Bacon, 'taters, and mushrooms just seem to do that, don't they? ::smile::



Cheesy Chicken & Tater Layered Casserole

Ingredients:

1lb bacon, fried
5 large potatoes, sliced
1.5 cups milk
1 cup mozarella, shredded
1 cup feta cheese, crumbled
1/2 cup parmesan, grated
1 Tbsp. basil
1 Tbsp. oregano
1 Tbsp. Indian sumac (if available)
1 Tbsp. worcestershire sauce
1 Tbsp. whiskey (optional)
12 oz. mushrooms, sliced
2 Tbsp. dried onion or 1/2 small onion diced
2 Tbsp. garlic, minced
2 boneless skinless chicken half-breasts, cut in bite sized pieces.

Boil potato slices for 5-10 minutes. You want them to be slightly soft but still firm enough to handle.

Mix milk, cheeses, and spices in a medium mixing bowl.

Sautee mushrooms, onion, and garlic. (I like to use a bit of the leftover bacon grease, but any oil/butter will work)

Then add the chicken and cook fully.

Remove the chicken and mushrooms from the heat and add worcestershire sauce and whisky, mixing lightly.

Lay one layer of potatoes in the bottom of a 9x13x2in. pan or two tall bread/loaf pans.

Lay 1/2 of the sliced bacon on top of potatoes.

Sprinkle 1/2 of the chicken and mushrooms on top.

Next, lightly spoon about half of the milk/cheese mixture on.

Place another layer of potatoes, then remaining bacon, and chicken/mushroom mix.

Place one last layer of potatoes on top and spoon the remaining milk/cheese mixture over everything.

Bake at 350F for 30-45 minutes. Remove and let cool for 10 minutes.
