The last time I tried this, I used a maple-flavored sausage. I also use sausage I make myself, using either ground pork or ground turkey, and fresh herbs. It really makes a nice change for an entree, and while it has meat, the real star is the apple.
It's always seemed to me the kind of dish that a hobbit would come up with. Maybe there is something hobbity about Emeril? *grin*
