Mel's corn pancakes

I've been experimenting, and my husband really liked the result, so I decided to post the recipe here.
ingredients for two persons
1 onion
1 small red pepper
100 grams corn (from a can)
200 grams mushrooms
50 grams green peas
150 grams mincemeat (=ground beef or hamburger meat)
50 grams grated cheese
150 grams corn flour
3 decilitre milk
1 egg
tomato ketchup
mexican seasoning
Bake minced meat, when brown drain fat and add sliced mushrooms, chopped onion and red pepper. Bake till onion and mushrooms are brown and add corn, peas, a bit of tomato ketchup and seasoning. Let it simmer for a while.
In the meantime make pancake batter using the cornflour, milk and the egg. Bake pancakes, after turning them put some cheese on top and let it melt.
Put the meat-vegetable mixture on the pancakes and roll them up.
