Second Breakfast

One thing Boromir appreciated about Imladris was the food, abundant and varied. Arising late one morning, he followed the aroma of something extraordinary…

“Lingonberries! In a bread with pumpkin, of all things! What is that spice, do you think? Nutmeg? Or mace?” It was astounding how the smallest one could talk so much without breathing. “Those dwarves can eat, can’t they? And those men really tuck it away. We’d starve if not for second breakfast. Good thing none of them are around right now, more for us….”

They had the grace to blush, and happily share what little was left.

Pumpkin Cranberry (or Lingonberry) Bread
Yield Size: 2 loaves
Ingredients
2 1/4 cups all-purpose flour
1 tablespoon pumpkin pie spice
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 cups granulated sugar
1 3/4 cups LIBBY'S® 100% Pure Pumpkin
1/2 cup vegetable oil
1 cup chopped fresh or frozen dried cranberries (or lingonberries)
PREHEAT oven to 350°F. Grease and flour two 9x5-inch loaf pans.
COMBINE flour, pumpkin pie spice, baking powder and salt in large bowl.
Combine eggs, sugar, pumpkin and vegetable oil in small mixer bowl; beat just until blended.
Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries.
Spoon batter into prepared loaf pans.
BAKE for 55 to 60 minutes or until wooden pick inserted in center comes out clean.
Cool in pans on wire racks for 5 to 10 minutes; remove to wire racks to cool completely.

I love the ficlet, and the recipe sounds absolutely yummy. Now if I only knew what lingonberries are! (But I love pumpkin bread in all its many forms!)

When we lived in Alaska, we picked small, tart, red berries we called lowbush cranberries; I later learned they are called lingonberries in other parts of the world. We always used them interchangeably in recipes with regular cranberries.

Oh boy, a new bread recipe! My favorite thing to bake!

This is so fun of humor and sweetness. The comment about how much the 'litte one could talk without breathing' was such a perfect description of Pippin - right on the nose! And his comments about the other races 'tucking it away!' I would love to have had more of Boromir's reaction to that remark!

Oh, you will love this - I've been making it for years, small ones to give away and big ones to have around for breakfast all through the holidays. When my blender died, my kids bought me a new one, just so I would have it to chop the cranberries.

I really enjoyed imagining what Boromir's reaction to the hobbits would have been, just as I still love stories that feature his interactions with them.
