I made this up years ago, when I got tired of salad with everything. It's very low-calorie, if you substitute vegetable oil for the butter. It's quick and easy to make - a huge part of its appeal for a working mom.
Corn with Tomatoes and Basil
1 T butter or 10 ml vegetable oil
1 medium green pepper, diced
2 small tomatoes or 1 large tomato, seeded, peeled and diced
3 green onions, sliced
2 cans corn niblets, drained
5 ml dried sweet basil flakes or fresh basil, finely chopped to your taste
1/2t sugar
salt & pepper to taste
Cook corn, green pepper, and basil in butter until heated through. Add tomatoes and green onions and heat some more. Do not overcook. Add sugar and season with salt and pepper to taste.
