I made 12 dozen of these cookies and took them to our local fire station to thank the firefighers for saving my home and town. They disappeared in minutes! These cookies are easy to make and freeze well and are just delicious. And they are pretty, too.

Jello Cookies

3/4 c. shortening
1/2 c. sugar
1 teaspoon baking powder
3 oz. package undissolved Jello (cherry, orange, lemon, strawberry-banana or whatever - mixing several batches and combining the different colored cookies makes a really pretty gift)
2 eggs
2 1/2 c sifted flour
1 teaspoon vanilla
1 teaspoon salt
sugar

Mix first five ingredients together until creamy. Add remaining ingredients. Roll into balls and roll balls in sugar. Place on ungreased cookie sheet and press gently with the bottom of a drinking glass which has been dipped in sugar. Bake at 325 degrees until cookie looks done (8-12 minutes - be careful the bottom doesn't scorch). Let cool completely before removing from cookie sheet.

I don't know how many this makes because they never survive long enough to be counted.
