I've been thinking (yes, that came as a shock to me too) since we represent different countries it would be nice to exchange recipes that are really typical for our own country. I at least am very interested in "classical" meals from other countries.
I will start with something very Dutch: hotchpotch. It's basically a mix of mashed potatoes and vegetables. There are a lot of different "hotchpotch-es", it's something that's eaten mainly in winter. This is my favorite:
You need (for two persons):
about 400 grams of peeled potatoes, cut into small pieces
about 400-450 grams carrots, cut into small pieces
one onion, chopped
butter
milk
salt and pepper
Bring the cleaned potatoes to the boil, meanwhile clean and chop the carrots and onion. When the potatoes boil, add the carrots and onion. Let it boil until the potatoes and carrots are done. (It takes about 15 till 20 minutes; depending on the type of potatoes you use). Drain the potatoes and vegetables.
Mash the potatoes, carrots and onion (with a mixer or a masher) with salt and pepper to taste and a bit of butter and milk. If you want it low-fat, use little butter and a bit more of the milk. You don't need much of both. It musn't become runny! Just add a little bit of butter and milk and add till you're satisfied with the result.
Eet smakelijk! (enjoy your meal)

Date: 2004-05-26 08:40 am (UTC)The vegetables that are used most in hodge-podge besides carrots are: endive (added raw), curly kale and sauerkraut (why do the English use the German word?)(DON'T boil sauerkraut in the same pan as the potatoes, because sauerkraut contains "something" that prevents the potatoes to become done). (sorry for that "crooked" sentence:)
But you can probably use most vegetables, I never tried any other, though. Just give it a try.

Date: 2004-05-26 09:40 am (UTC)I don't know if my family will like carrots and potatoes mashed together, but I'm definitely going to try it. Will have to leave out the onions, though. I'm the only one who will eat them.

Date: 2004-05-26 10:14 am (UTC)My brother absolutely despises onions, but loves carrot hodge-podge. He asked my mother ones to prepare it without the onions, but he didn't like it at all without them. (If my mother chopped up the onions really small, my brother didn't seem to mind them).
But maybe your family likes it without onions. It's probably just a matter of trial and error
